3 Ingredient Blueberry Plantain Pancakes

Who doesn’t love pancakes! Now you can make them with just a few simple whole foods. It doesn’t get any simpler than this! All you need are green plantains, eggs and a pinch of baking powder! Throw them in a blender and you have pancake batter in 10 seconds.

We used a non-storebought breed of plantain/banana known as the “cuadrado” in Costa Rica. We grow them and love them, but traditional plantains or green bananas work.

We’ve made numerous version of the plantain pancake recipe.  We’ve also found that pinch of salt makes these ‘just right’.  You really can’t go wrong if you stick to the base ingredients.  Try adding some Yuca or almond flour.  Or try blending another fruit in to add a bit of sweetness.
